Crawfish Etouffee

Crawfish Etouffee
(Serves 6)

Ingredients:
 

1 stick butter or oleo
2 level Tbsp flour
1 medium onion, chopped
2 Tbsp green pepper, chopped fine
1 lb. crayfish tails and extra portion of fat
1 dash garlic (optional)
2 green onions, minced
¼ cup parsley, minced
¼ tsp red pepper
½ tsp salt


Directions:

Melt butter and stir in flour.  Add onion, garlic and green pepper.  Cook about 30 minutes.  Add fat and cook 20 minutes.  Add tails and cook 20 minutes.  Add other ingredients and simmer about 20 to 30 minutes.  Serve over rice.  With French bread and a green salad.
