Baked Fish with Cheese Sauce

Directions:
1 ½ to 2 pounds white fish
Put fish in pan (roaster) and put in just enough water to cover.  Simmer with a slice of onion and carrots.  Add ½ tsp salt and 1 bay leaf.  Simmer 20 minutes.  While fish is simmering make sauce:
½ cup cream
½ cup milk
2 Tbsp flour
2 Tbsp butter
¼ tsp salt
1/8 tsp nutmeg 
½ cup grated cheese 
1/3-cup stock from fish
1/8 tsp pepper
½ tsp paprika
½ cup dry sherry
1 tsp chopped parsley


More fish, you’ll need more sauce.  Cover fish with sauce and bake for 30 minutes at 350°F.
