Beef and Ham Gumbo

Ham Gumbo
Beef and Ham Gumbo In Rice Border
(Yields 8 servings)

Ingredients:
Rice Border
¾ lb cured ham, diced
1 lb beef, diced
2 Tbsp chopped parsley
1 onion, sliced
1 green pepper, chopped fine
½ cup diced celery
1-pint water
1 qt. tomatoes (fresh canned)
1 qt. okra (cut crosswise)
Bay leaf and celery seed
Salt and pepper to taste

Directions:
The gumbo is a famous Creole dish.  To make this version of it cook the pieces of ham and beef until they are browned.  Then add the parsley, onion, green pepper and celery.  Cook mixture for a few minutes and then add water and the tomatoes.  Cover the skillet and simmer until the meat is almost tender.  Then add the okra.  Season to taste and simmer uncovered until the okra is tender and the stew has thickened.  Serve in rice border and sprinkle with file.  Rest time is 20 minutes.  Temperature:  Simmer.  Cooking time:  45 minutes.
