Black Eye Peas

Black Eye Peas

Ingredients:


2 cups water
¾ cup dried black-eyed peas (6 ounces)
1 Tablespoon vegetable oil
1 cup sliced okra
1 small onion, chopped (1/2 cup)
½ teaspoon salt
¼ teaspoon Sweet Mama Janisse’s Chili Pepper Paste
2 cloves garlic, crushed
½ cup chopped green pepper
½ cup chopped celery


Directions:

Heat water and peas to boiling in 2-quart saucepan. Boil uncovered 2 minutes; reduce heat to low.  Cover and simmer 30 to 40 minutes; stirring occasionally, until beans are tender (do not boil or peas will burst); drain.

Heat oil in same saucepan over medium heat.  Cook okra, onion, salt, chili pepper paste, garlic, green peppers and celery in oil about 5 minutes, stirring occasionally, until onion, green peppers and celery are tender.  Stir in beans.  Cook, stirring occasionally, until hot.

Black-eyed peas with ham:  Cook 1/3 cup chopped fully cooked smoked ham or your choice of smoked meat with peas in step 1
