Louisiana Creole cuisine is a style of cooking originating in Louisiana (centered on the Greater New Orleans area) which is a melting pot cuisine that blends French, Spanish, Portuguese, Italian, Greek, Asian Indian, Native American, and African influences. It is similar to Cajun cuisine in ingredients (such as the holy trinity), but the important distinction is that Cajun cuisine arose from the more rustic, provincial French cooking adapted by the Acadians to Louisiana ingredients, whereas the cooking of the Louisiana Creoles tended more toward classical European styles adapted to local foodstuffs.

Growing up in a happy but poor home environment teaches you an awful lot of ways to make due with what you have.  You learn to become creative with what you have on hand.  I am forever thankful for having this be a major part of my introduction to food. The mixing, the extending, the combining of many small portions of lots of different things and creating one large amount, enough to feed us all.  I guess I should explain what I just said.  There were times when my grandmother would want to make a dish and there wasn’t enough of say sauce.  She would go to the cupboard and find maybe a little of this and a little of that, put them all together and create “Magic”.  There was a lot of magic created by my grandmother and she instilled her magic touch in me, teaching me patiently how to create my own “Magic” with taste and soul.
