Crab or Shrimp Balls

Crab or Shrimp Balls
(Yields 2 ½ dozen)

Ingredients:
 

1 lb shrimp, boiled & cleaned
3 Tbsp cream cheese
1 Tbsp chili sauce
1 tsp Worcestershire sauce
2 tsp horseradish
¼ cup celery, finely chopped
2 Tbsp green pepper, finely chopped
1 hard cooked egg, chopped
1 Tbsp onion, grated
1 Tbsp parsley
¾ tsp salt
Dash of black & cayenne pepper


Directions:

Chill shrimp.  Then mash very fine with fork or blender.  Add all other ingredients and mix well.  Roll into small balls, size of large marbles.
Roll lightly in finely chopped parsley.  Chill.
Canned or frozen shrimp will do – as always, fresh is best.
