Pork Cutlets w/Mama’s Special Sauce
(Makes 4 servings)
Ingredients:
1-pound pork tenderloin cut into 8 pieces
Press or pound each
Salt
Pepper
Granulated garlic
Flour
2 Tablespoons butter, add more if needed
SAUCE
3/4 cup apple juice or cider
1/4 cup cider vinegar
2 Tablespoons brown sugar
1-1/2 teaspoons molasses
1/2 teaspoon ground cloves
1-1/2 teaspoons dry mustard
1-1/2 teaspoons ginger
Directions:
Season chops lightly with salt, pepper and granulated garlic:
Dust with flour lightly
Brown chops in butter on both sides.
Add sauce ingredients (which have been combined) to skillet.
Simmer, covered about 20 minutes. Remove cover and simmer until sauce
thickens. Do not let burn.
