Spicy Corn Casserole

Mama  Janisse’s Spicy Corn Casserole

(Makes 12-14 servings)


4 eggs
1 can whole kernel corn, drained
1 can cream style corn
1 ¾ cups cornmeal
1 ½ cups buttermilk
3 Tablespoons Sweet Mama Janisse’s Chili Pepper Paste
1-cup butter or margarine melted
2 medium onions, chopped
1-teaspoon baking soda
3 cups shredded cheddar cheese, divided



Beat eggs in a large bowl.
Add the next eight ingredients and mix well.
Stir in 2 cups cheese.
Pour into a greased 13x9x2 inch-baking dish.
Bake uncovered at 325° for 1 hour.
Put remaining cheese on top.
Let stand about 10 minutes before serving.
