Maque Choux
(Makes 8 servings)


12 ears of fresh corn on the cob
½ pound of butter or ½ cup bacon drippings
1 large onion, chopped
1 large green bell pepper, chopped
2 medium garlic cloves, minced or 2 Tblsp
2 large tomatoes peeled, chopped
1 cup canned chicken broth
Salt & Cayenne to taste


Directions:

Cut corn from cob by scraping knife across the top of the kernels, scrape across the kernels a second time to remove the “milk” from the corn.

Melt butter in a heavy pot; sauté onions and bell peppers until onions are transparent.

Add corn, tomatoes, garlic and chicken broth; cover and simmer about 12 minutes.
Add salt and cayenne; simmer another 15 minutes.
